1 cup chopped cucumber
1 medium yellow bell pepper, chopped
1 cup diced plum tomatoes
20 oz low-sodium tomato juice
½ cup chopped celery
¼ cup finely diced red onion
2 cloves garlic, minced
4 tsp olive oil
¼ cup white wine vinegar
2 Tbsp chopped fresh parsley
1. Combine all ingredients in large bowl and mix well.
2. Cover and refrigerate for at least two hours to allow
flavors to develop. Serve chilled or at room temperature.
