Spinach Quiche
Yields 1 Serving: 1 Lean, 3 Green, 2.5 Condiments
Ingredients:
1 cup egg white substitute
1/2 cup white mushrooms, sliced thin
1/2 cup red bell pepper, diced
1 cup raw spinach
1/2 cup reduced-fat shredded mozzarella cheese
5 sprays non-stick cooking spray
1/2 tsp pepper
1/2 tsp garlic powder
Directions:
- Preheat oven to 350 degrees F.
- Combine all ingredients in a large bowl.
- Pour mixture into a lightly greased pie plate.
- Bake 30 minutes or until set; edges will start to pull away from the sides.
