Red Velvet Whoopie Pies

Red Velvet Whoopie Pies

Yield: 4 servings (2 whoopie pies per serving)

Per serving: 1 Medifast Meal| 1 Healthy Fat | 1½ Condiments

Total time: 25 minutes

Ingredients

2 packets Medifast Original Pancakes

2 packets Medifast Chocolate Chip Soft Bake

½ Tbsp unsweetened cocoa powder

½ tsp baking powder

½ cup unsweetened vanilla almond or cashew milk

6 Tbsp liquid egg substitute

1 tsp apple cider vinegar

Red food coloring

Cooking spray

½ cup low-fat cream cheese

1 – 2 packets zero-calorie sugar substitute (to taste)

Directions

  1. Preheat oven to 350 °F.
  2. Combine Original Pancakes, Chocolate Chip Soft Bake, cocoa powder, and baking powder in a medium-sized bowl. Add milk, egg and apple cider vinegar, and mix until a batter-like consistency. Optional, add red food coloring.
  3. Divide batter evenly among eight slots of a lightly greased regular or heart-shaped muffin tin (should fill only a third of each slot). Bake for about 15 to 20 minutes, until a toothpick inserted in centers comes out clean.
  4. Meanwhile, combine cream cheese and sugar substitute.
  5. Once cooled, slice each muffin in half horizontally. Spread one tablespoon of cream cheese filling onto the bottom half of each muffin, and top with the remaining muffin halves. Enjoy!
