December 8th is National Brownie Day and to celebrate we are sharing a healthy and delicious brownie recipe featuring the Medifast Brownie Soft Bake. A traditional brownie typically has over 200 calories, 35g carbohydrate, 20g of sugar, and little to no protein, fiber, vitamins, and minerals per serving. The Zucchini & Walnut Brownies, however, have only 180 calories, 17g carbohydrate, and 9g of sugar per serving. They are also a great source of protein (13g), fiber (4.5g), vitamins and minerals (20% of the Daily Value for 24 vitamins and minerals). So go ahead, indulge in a serving of these delicious brownies and celebrate National Brownie Day free of guilt!
Zucchini & Walnut Brownies
1 Medifast Meal | ¼ Green | 1 Healthy Fat; Serves 4
Ingredients:
4 Medifast Brownie Soft Bakes
1 cup shredded zucchini
1 1/3 oz chopped walnuts
½ cup + 2 Tbsp cold water
Directions:
Combine all ingredients in a large microwave safe baking dish. Microwave for five minutes or until toothpick inserted in center comes out clean.

6 Additional Creative & Delicious Brownie Variations
- Add 2 Tbsp of powdered peanut butter (1 condiment) for a little extra protein and that peanut buttery taste you love.
- Add veggies! Try shredded zucchini or pureed kabocha squash (1/2 cup = 1 Green serving).
- Make it spicy. Add a ¼-½ tsp of cinnamon, chipotle powder, and/or cayenne.
- Cut your brownie in half lengthwise. Mix 1 Tbsp whipped topping (1 condiment) with 1 Tbsp sugar-free syrup (e.g. caramel, hazelnut, or English toffee; 1 condiment). Top one half of the brownie with the mixture, and then add the other half to make a sandwich. Place it in the freezer for 15-30 minutes, and then enjoy your frozen treat!
- Add a 1/3 oz of any chopped nut. Try walnuts, macadamia nuts, hazelnuts, or pecans (1/3 oz = 1 Healthy Fat serving).
- Mix one tablespoon of light cream cheese (1 Healthy Fat) with 2 Tbsp sugar-free syrup (1 condiment), like Raspberry, and add to your brownie prior to microwaving.
