Ingredients
- 1 tsp olive oil, divided
- ½ cup sliced jalapeno
- ½ cup diced tomato
- ½ cup diced bell pepper
- ¼ tsp garlic powder
- ¼ tsp onion powder
- 1 tsp hot pepper sauce (optional)
- 2 cups liquid egg substitute
- 1/8 tsp salt
- ¼ tsp pepper
- 1½ oz sliced avocado
- ½ cup fresh cilantro
Directions
- Heat ½ tsp olive oil in skillet over medium heat. Add jalapeños, tomato, bell pepper, garlic powder, onion powder, and hot pepper sauce and sauté for 5-7 minutes.
- Meanwhile, whisk liquid egg substitute with salt and pepper in a medium bowl.
- In a separate skillet, heat remaining ½ tsp olive oil over medium heat. Add egg mixture to olive oil, and sauté, stirring frequently to create scramble, until cooked.
- Serve eggs topped with sautéed vegetables, avocado, and fresh cilantro.
