Spiced Crockpot Roast Beef
Serves 6. Each serving provides a complete Lean and Green Meal and three condiments.
Ingredients
- 2 lbs beef roast
- ½ tsp salt
- ½ tsp ground black pepper
- 4 cups thinly sliced white mushrooms
- 1 cup chopped celery
- 3 cups green beans
- 1 cup diced scallions
- 2 tsp low-sodium soy sauce
- 2 tsp Worcestershire sauce
- 4 tsp balsamic vinegar
- 2 crushed garlic cloves
- 2 tsp ground mustard seed
- 2 Tbsp water
Directions:
- First, trim all visible fat from the roast, and salt and pepper both sides of the roast. Place the beef in the crockpot.
- Add the remaining ingredients to the crockpot.
- Cover, and cook on low for about 8 hours or on high for 4 to 5 hours.
