½ medium head red cabbage, cut into 2-inch wedges
½ medium head green cabbage, cut into 2-inch wedges
3 Tbsp olive oil
2 cloves garlic, minced
½ tsp salt
¼ tsp pepper
½ tsp fennel seed
1. Preheat oven to 400° F.
2. Place cabbage in a single layer on a baking sheet.
3. Whisk together the olive oil, garlic, salt, pepper, and fennel seed in a small bowl. Brush each cabbage piece completely with the mixture.
4. Roast 40-45 minutes or until tender and golden brown.
